I started baking again after a….month(?) hiatus. I am finally attempting the cheesecake factory stefanie’s ultimate red velvet cheesecake. I made the two halves of the cheesecake portion last night and tonight, I made the two layers of red velvet cake! All the layers seemed to have turned out well-so far! The cheesecakes popped out of their pans (w/a lil more difficulty than expected) and the velvet cakes-one came out so much cleaner than the other-but still flat bottoms! Tmrrw morning I will assemble the cakes and frost w/cream cheese frosting and hopefully some white chocolate shavings. I used Alton Brown’s Sour cream cheesecake recipe and Paula Deen’s grandma’s red velvet cake recipe. I will also be using Paula’s marshmallow cream cheese frosting recipe for the icing.
cheesecakes. I’m currently waiting for 24 mini cheesecakes to finish baking in the oven. They’re for my cousin’s birthday festivities tomorrow night that I, unfortunately, will not be able to attend bc FH has work and I can’t find a babysitter to watch the apt/kids while they sleep. Sigh.
I used Alton Brown’s sour cream cheesecake recipe, and tweaked the procedures to accommodate cupcake pans instead of a deep cake pan. And I still put the pans in a water bath like AB recommends, (probably the most difficult/annoying aspect of the way I make the cheesecakes…which I’m hoping is the reason they ‘stand out’ in flavor and texture…. although if I find out years from now that i could’ve done away with the water bath and 2hour+ bake time in lieu of no water bath and 30min bake time, i’m gonna be one exasperated mama.
Anyway- I put the cupcake pans in huge pans with hot water (like pyrex or a roasting pan) and then let them sit in a 250 degree over for 75-90mins (AB does 60mins). Then, as per AB, I open the over door for 1 min (sometimes 30 secs if i feel like they need more heat cuz the tops of the cupcakes aren’t firm enough) and then close the door and leave them in there for another 60-90 mins. (AB does 60min). As soon as the time if done, they’re off to sit in a fridge for 6+hrs to set.
The next day I make macerated strawberries. I chop up some fresh strawberries, add a couple tsp of sugar and honey, mash a couple of those strawberries with a fork/spoon and into the fridge they go until its time to serve .
